Baked Pumpkin Kesari

Deepavali, the festival of lights, is too a festival of sweets:). This fourth dimension nosotros are going seasonal  by making the Diwali sweetness amongst locally grown pumpkin. Baked pumpkin kesari is inspired from baked mango kesari that I tasted at a friend's place. Kesari is a mutual sweet/snack from southward India. Kesari tin me made inward multiple ways - steamed, baked or stovetop versions. It is unremarkably made amongst cream of wheat or rava. I am making it amongst idli rice (coarsely terra firma par boiled rice). It is sweetened amongst sugar, dissimilar many other quicknhealthy desserts in addition to sweets. So the fundamental equally ever is moderation. Serve small-scale portions :).

Ingredients:
  • Pumpkin puree - 1 loving cup *
  • Idli rava - 1 loving cup **
  • Unrefined organic saccharide - 3/4 loving cup  (Add unopen to based on your preference)
  • Organic grass-fed butter - 1/2 cup
  • Cardamom - 5-6 pods (skin removed in addition to powdered. 
  • Ghee or kokosnoot fossil oil or greasing the baking dish.
Directions:
  • Preheat oven at 350 bird F. Grease a 8 X 8 baking dish amongst ghee or kokosnoot oil.
  • Heat a pan on medium rut in addition to dry out roast the idli rava. Keep stirring taking attention non to burn. Switch off only when it starts to plough golden. You tin optionally add together a a teaspoon of ghee at this point.
  • Blend the pumpkin puree along amongst cardamom pulverisation in addition to butter. 
  • Add the pumpkin mix to the roasted rava in addition to mix well.
  • Pour the mixture to the greases baking dish.Bake at 350 deg F for xxx minutes. 
  • Let it cool in addition to cutting into desired shapes in addition to sizes.

Notes:
*  To brand pumpkin puree:
  • Cut pumpkin into quarters in addition to bake inward 400 bird oven for 45 minutes to an hour. Let it cool, peel the skin, take away the nitty-gritty in addition to seeds. Puree the flesh using a blender or food 
  • If y'all want to brand a small-scale batch of pumpkin puree, cutting out wedges from pumpkin, take away skin, nitty-gritty in addition to seeds in addition to brand sparse slices. Heat a pan on medium heat, drizzle kokosnoot fossil oil in addition to adjust the slices without crowding. Roast till slightly brownish for most five minutes.Flip the slices in addition to repeat on the other side. Let it cool in addition to puree. 

** Idli rava is coarsely terra firma parboiled rice. You tin purpose regular rava/suji/semolina.
