Roasted Taro Quinoa Salad

What comes to my hear when I mean value near Taro a.k.a Chembu inwards my language? All the traditional South Indian dishes that nosotros brand amongst it similar pulissery, olan, pulinkari, puzhukku in addition to many more. So how near making a warm salad amongst taro? I said warm, then it is non a raw salad, I am going to create it :-).

Taro is a nutrient rich beginning vegetable to include inwards your diet. Also, similar another types of yams, it is a natural source of phytoestrogen which helps to  balance the estrogen levels inwards women. Have mood swings or other PMS? So this salad is my agency to include taro inwards my regular weekday luncheon salads. I am using pan roasted taro along amongst merely about wilted kale in addition to cooked quinoa.. yum




For the Salad:
  • Taro - four small
  • Quinoa - 1 loving cup (Soaked overnight or 6-8 hours) 
  • Red onion - 1 
  • Green chilly - 3-4
  • Garlic - 3-4 cloves
  • Kale - 8-10 leaves (or whatever other greens or cabbage)
  • EV Coconut oil - 1 Tbs
  • Turmeric pulverization - 1/2 tsp

  • Cook quinoa amongst 11/2 cups of water. 
  • Meanwhile, launder in addition to pare taro, piece into sparse slices. 
  • Chop onion, garlic in addition to light-green chilly.
  • Slice kale real thin. 
  • Heat kokosnoot oil on medium heat, add together turmeric pulverization in addition to sauté onion, garlic in addition to light-green chilly for a few seconds.
  • Add taro slices in addition to laissez passer on a crude oil stir to coat them amongst onion/garlic/chilly in addition to turmeric. Cook covered for 8-10 minutes.
