Pumpkin Kokosnoot Cookies

  • Sugar Pumpkin - 1/2 loving cup (grated - run across notes)
  • Organic whole wheat pastry flour - 1/2 cup
  • Organic dried shredded kokosnoot - 1/2 cup
  • Organic kokosnoot palm sugar - 3-4 Tbs 
  • Virgin kokosnoot fossil oil - iii Tbs.
  • Local dearest - 1 Tbs.
  • Baking soda - 1/2 tsp
  • Warm H2O - 1 Tbs.
  • Powdered cardamom or cinnamon pulverization - 1/2 tsp. ( optional )

Dry ingredients:
  • Mix grated pumpkin, coconut, flour, carbohydrate too cardamom/cinnamon inward a bowl. 
Wet ingredients:
  • In a modest bowl add together kokosnoot fossil oil too dearest too melt keeping over warm water.
  • Mix baking soda too a tablespoon of warm H2O too add together to melted oil/ dearest too mix well. 
  • Add moisture ingredients to dry out ingredients too mix amongst a spoon to cast a dough. No involve to over mix or kneed the dough.
  • Divide the dough into 12 equal parts too cast balls.
  • Lay them separated past times an inch to a greater extent than or less on a cookie sheet. Press them slightly. 
  • Bake inward your toaster oven at 350 degrees for 18-20 minutes.
  • Cool completely on wire racks too shop inward air tight containers.







Notes: To grate pumpkin - cutting the overstep off amongst a sudden knife - quarter the pumpkin -  peel the peel - take the kernel too seeds -  cut the remaining meat into big chunks - grate each chunk using a vegetable grater.
