Quinoa Chickpea Wintertime Salad

It has been brutally mutual depression temperature for the past times few weeks, too it is inward these times that nosotros crave for something warm too spicy inward our tiffin box. I prefer something warm too however does non ask a lot of cooking, something satisfying too however lite on your stomach. Here's ane that fits the nib too my tiffin box... a quick'n'healthy quinoa salad alongside chickpeas, veggies, fruits too nuts. 

Ingredients:
    • Quinoa - 1 loving cup (Soaked overnight)
    • Chickpeas - 1/2 loving cup (Soaked overnight) 
    • EV olive crude - iv Tbs
    • Garlic - 4-5 cloves (minced)
    • Green chilly - 4-5 (chopped)
    • Green beans - 1 loving cup (chopped fine)
    • Bell pepper (multiple colors) - ii loving cup (chopped fine)
    • Green mango - 1 loving cup (chopped fine, or 2-3 Tbs fresh squeezed lemon juice)
    • Baby greens - ii cups (spinach, kale or a mix)
    • Almonds - 1/2 loving cup (roughly chopped)
    • Salt - every bit per taste
    • Apples - ii (chopped)

    Directions:
    • Drain too rinse quinoa well, gear upwards alongside 1 loving cup of water.  Drain too rinse chickpea too gear upwards alongside 1/2 loving cup of water. (I purpose pressure level cooker for both)
    • Heat a tablespoon of olive crude too saute garlic too light-green chilly for a pair of minutes.  Add chopped light-green beans too gear upwards covered till light-green beans are almost done. (for most 5-6 minutes)
    • Add chopped bell pepper, chopped mango (if using) too chopped greens too sauté till warm too greens are only wilted. 
    • Switch off, transfer to a bowl, add together chopped apples, almonds, salt, lemon juice (if using) too remaining olive oil. Mix everything good too serve at nowadays or every bit a packed lunch.
    • Makes three to iv servings. Enjoy!!
